What’s the difference

between sifted flours and whole flours?

All of our flours are “whole grain”. Each product includes the bran, germ, and endosperm of the whole berry. These berries run through our stone mills, and the result is a wonderful creamy off white color, as opposed to a purely white flour.

Sifted Flours

  • Sifted products go through finer sifter screens to take out the large and medium bran particles from the flour.

  • They are milled and sifted to a finer granulation than our whole flours.

Whole Flours

  • Whole products go through larger “Scalper” screens to take out only the largest bran particles from the flour.

  • They are milled to a more coarse granulation than our sifted flours.

  • if you flatten these products on a table or in your hand, you will see larger flakes of bran

Our organic flour is the most flavorful when fresh. That’s why we mill-to-order. Our flour is “best by” one year after milling. Corn products are “best by” eight months after milling. Whole berries can be kept for over a year if they are sealed from pests and stored properly.

Store in a cool, dry place

you may also transfer the flour to an air tight container and refrigerate or freeze for long term storage.
