Millstones

On our New American Stone Mills, the top stone is the one in motion. It’s called the runner stone. The bottom stone is stationary, and it is called the bedstone.

Part of the millers job is to monitor how the stones are working. With the wheel shown here, they can lower or raise the runner stone to get the flour to a certain “ je ne sais quoi".
